INGREDIENTS

1 2/3 cup pearled (Israeli) couscous, uncooked

1 tsp cinnamon

½ cup dried apricots, chopped

½ cup pistachios, toasted

½ cup coconut, shredded and unsweetened

1 bunch chives, finely chopped

Salt and pepper

PREPARATION

Prepare the couscous per the manufacturer’s instructions, adding the cinnamon and apricots before cooking (this usually involves boiling water with some oil and pouring it over the couscous to let sit).

When the couscous is finished cooking, add in pistachios, coconut, and chives. Season with salt and pepper and fluff with a fork.
